Instructions

  1. Prepare the Chicken: Preheat the oven to 375°F (190°C). Carefully cut a pocket into each chicken breast without cutting through.
  2. Make the Filling: Mix spinach, ricotta, mozzarella, Parmesan, garlic, Italian seasoning, salt, and pepper in a bowl.
  3. Stuff the Chicken: Fill each chicken breast with the spinach mixture and secure with toothpicks.
  4. Sear and Bake: Sear the chicken in olive oil until golden. Bake in the oven for 20–25 minutes.
  5. Serve: Remove toothpicks before serving.
