For the bars:
- 1 cup granulated sugar
- 1 cup light corn syrup
- 1 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 4 cups crispy rice cereal
- 2 cups mini marshmallows
For the chocolate-caramel topping:
- 2 cups semisweet chocolate chips
- 1 1/2 cups caramel bits
- 2 tablespoons heavy cream
Instructions
- Prepare the bars: Line a 9×13-inch baking dish with parchment paper or lightly grease it.
- Cook the sugar mixture: In a large saucepan over medium heat, combine the sugar and corn syrup. Stir constantly until boiling.
- Combine ingredients: Remove from heat, then stir in the peanut butter and vanilla until smooth. Fold in the rice cereal and marshmallows.
- Melt the chocolate-caramel: In a microwave-safe bowl, melt the chocolate chips, caramel bits, and heavy cream.
- Mix and set: Pour half of the chocolate-caramel mix into the rice mixture. Press into the baking dish. Pour the rest of the chocolate-caramel on top. Let cool for 1-2 hours.
- Serve: Cut into squares and enjoy!
