Ingredients
Scale
Crust
- 2 1/2 cups graham cracker crumbs
- 1/2 cup melted butter
- 1/4 cup sugar
Filling
- 2 cups heavy whipping cream
- 1 box (3.4 oz) instant vanilla pudding mix
- 1 cup milk
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
Chocolate Glaze
- 1/2 cup chocolate chips
- 2 tablespoons heavy cream
Garnish
- Fresh strawberries, sliced and whole for garnish
Instructions
- Prepare the crust: In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press this mixture firmly into the bottom of a 9×13-inch pan to form an even crust layer.
- Mix the pudding filling: In a separate large bowl, whisk together heavy whipping cream, instant vanilla pudding mix, milk, powdered sugar, and vanilla extract until the mixture thickens and becomes smooth, resembling a fluffy mousse texture.
- Layer the filling and strawberries: Spread half of the pudding mixture evenly over the graham cracker crust. Arrange a layer of fresh sliced strawberries over the pudding to add freshness and flavor.
- Add remaining pudding mixture: Spread the second half of the pudding mixture evenly on top of the strawberry layer, smoothing out the surface carefully.
- Prepare chocolate glaze: In a microwave-safe bowl, melt the chocolate chips together with heavy cream in 30-second increments, stirring in between until the mixture is smooth and glossy.
- Drizzle glaze and chill: Drizzle the melted chocolate glaze evenly over the top of the pudding layer. Cover the cake and refrigerate it for at least 4 hours or overnight to allow the layers to set properly.
- Garnish and serve: Before serving, decorate the top of the cake with additional fresh strawberries for a beautiful and fresh finishing touch.
Notes
- For best results, chill the cake overnight to allow the flavors to meld and the layers to firm up.
- You can substitute milk with any preferred milk alternative if desired.
- Use freshly sliced strawberries for the best taste and texture, and ensure they are dry to avoid sogginess.
- The chocolate glaze can be slightly cooled before drizzling to avoid melting the pudding layer.
- This recipe can be made gluten-free by using gluten-free graham crackers.
