Sugar Cookie Crust:

  • 1 roll (16.5 oz) refrigerated sugar cookie dough

Cheesecake Filling:

  • 16 oz cream cheese (softened)
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 tablespoon all-purpose flour

Optional Topping:

  • Colorful sprinkles or sanding sugar

Instructions

  1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Press the sugar cookie dough evenly into the bottom of the pan to form the crust.
  3. In a medium bowl, beat the softened cream cheese until smooth. Add the sugar, vanilla extract, egg, and flour, and mix until fully combined and creamy.
  4. Pour the cheesecake mixture over the cookie dough crust and spread evenly. If desired, top with sprinkles or sanding sugar for a festive finish.
  5. Bake for 30–35 minutes, or until the center is set and the edges are lightly golden.
