Sugar Cookie Crust:
- 1 roll (16.5 oz) refrigerated sugar cookie dough
Cheesecake Filling:
- 16 oz cream cheese (softened)
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1 tablespoon all-purpose flour
Optional Topping:
- Colorful sprinkles or sanding sugar
Instructions
- Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
- Press the sugar cookie dough evenly into the bottom of the pan to form the crust.
- In a medium bowl, beat the softened cream cheese until smooth. Add the sugar, vanilla extract, egg, and flour, and mix until fully combined and creamy.
- Pour the cheesecake mixture over the cookie dough crust and spread evenly. If desired, top with sprinkles or sanding sugar for a festive finish.
- Bake for 30–35 minutes, or until the center is set and the edges are lightly golden.
- Allow the bars to cool completely at room temperature, then refrigerate for at least 2 hours before slicing and serving.
