Ingredients
Scale
Cheesecake Mixture
- 8 oz Cream Cheese (Full-fat is preferred, softened)
- 1/2 cup Powdered Sugar
- 1 tsp Vanilla Extract
- 1 cup Fresh Strawberries (half pureed, half chopped)
Toppings & Assembly
- 6 Ice Cream Cones (Standard or waffle cones)
- 1 cup Crushed Graham Crackers
- Extra chopped Fresh Strawberries for topping
- 1 cup Whipped Cream (store-bought or homemade, optional)
Instructions
- Soften Cream Cheese: Allow the cream cheese to come to room temperature by leaving it out for about 30 minutes, which ensures it blends smoothly.
- Prepare Cheesecake Base: In a mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until the mixture becomes perfectly smooth and creamy.
- Add Strawberries: Puree half of the fresh strawberries until smooth, chop the remaining half into small pieces, then gently fold both the puree and chopped strawberries into the cheesecake mixture to combine evenly.
- Prepare Cones for Filling: Place ice cream cones upright in a muffin tin to keep them stable and prevent spills when filling.
- Fill Cones: Spoon the cheesecake mixture generously into each cone but leave room at the top for toppings.
- Add Toppings and Chill: Sprinkle crushed graham crackers and additional chopped strawberry pieces over the filled cones. Refrigerate the cones for about 30 minutes to set and chill before serving.
Notes
- For variation, you can swap strawberries with blueberries or raspberries.
- Use full-fat cream cheese for a creamier texture and richer flavor.
- Honey or agave syrup can be substituted for powdered sugar if you prefer a natural sweetener.
- Use waffle cones for extra sweetness and crunch, or standard cones for a neutral base.
- Chilling the cones helps the filling to firm up and enhances the presentation.
