Description

Sweet Chili Chicken is a vibrant and flavorful stir-fry recipe combining tender chicken breast pieces marinated in sweet chili and soy sauce with crisp bell peppers and broccoli. Quick to prepare in just 30 minutes, this Asian-inspired dish is perfect for a weeknight dinner, garnished with sesame seeds and green onions for added texture and flavor.

Ingredients

Scale

Chicken and Marinade

  • 1 pound chicken breast, cut into bite-sized pieces
  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch

Aromatics and Vegetables

  • 1 tablespoon minced garlic
  • 1 teaspoon minced ginger
  • 1 bell pepper, sliced
  • 1 cup broccoli florets

Other Ingredients

  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Sesame seeds, for garnish
  • Green onions, sliced for garnish

Instructions

  1. Marinate Chicken: In a bowl, combine the sweet chili sauce, soy sauce, and cornstarch. Add the chicken pieces and toss to coat evenly. Let the chicken marinate for 15 minutes to absorb the flavors.
  2. Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Add the marinated chicken and cook while stirring occasionally until browned and cooked through, about 7 to 10 minutes. Remove the chicken and set aside.
  3. Sauté Vegetables: In the same skillet, add minced garlic and ginger and cook briefly until fragrant. Add sliced bell pepper and broccoli florets and sauté for 5 to 7 minutes until the vegetables are tender-crisp.
  4. Combine: Return the cooked chicken to the skillet with the vegetables. Pour in any remaining marinade. Stir and cook together for 2 to 3 minutes until heated through and the sauce thickens slightly.
  5. Serve: Remove from heat, garnish with sesame seeds and sliced green onions. Serve hot over steamed rice or noodles if desired.

Notes

  • To keep vegetables crisp, avoid overcooking; sauté them until just tender.
  • For extra heat, add red chili flakes or fresh sliced chilies to the marinade.
  • This dish pairs well with steamed jasmine rice or rice noodles.
  • Use boneless skinless chicken thighs for a juicier alternative.
  • Ensure the skillet is hot before adding chicken to achieve a nice sear.
