Instructions

Add the diced sweet potatoes, sprinkle with smoked paprika, garlic powder, salt, and pepper, and stir well to coat. Cook for 10–12 minutes, stirring occasionally, until the sweet potatoes are golden brown and tender.
  3. Add Vegetables: Push the sweet potatoes to one side of the skillet. Add the remaining tablespoon of olive oil, then toss in the onion and bell pepper. Cook for 5–7 minutes until the vegetables are soft and slightly caramelized.
