Ingredients
Scale
Tomato Mixture
- 8 medium tomatoes (about 500g), coarsely chopped and drained
- ½ small red onion, finely chopped
- 2-3 garlic cloves, crushed
- 6-8 fresh basil leaves, finely chopped
- 30ml balsamic vinegar
- 60-80ml extra virgin olive oil
- Salt and freshly ground black pepper, to taste
Bread
- 1 baguette or ciabatta loaf, sliced
- Extra olive oil for brushing
Instructions
- Prepare the Tomato Mixture: In a bowl, combine the coarsely chopped and drained tomatoes, finely chopped red onion, crushed garlic cloves, and finely chopped fresh basil leaves. Mix these ingredients gently to blend the flavors.
- Add Dressing: Drizzle the balsamic vinegar and extra virgin olive oil over the tomato mixture. Stir well to coat everything evenly.
- Season and Rest: Season the mixture with salt and freshly ground black pepper to taste. Let the mixture sit for 10-15 minutes to allow the flavors to meld together.
- Toast the Bread: Preheat your oven to 375°F (190°C) or heat a grill pan over medium heat. Lightly brush both sides of the sliced baguette or ciabatta with olive oil.
- Toast Bread Slices: Place the bread slices on a baking sheet if using an oven, and toast for 8-10 minutes until golden and slightly crisp. Alternatively, grill each slice for 1-2 minutes per side until nicely toasted and golden brown.
- Assemble the Bruschetta: Spoon a generous amount of the tomato mixture onto each toasted bread slice, ensuring some of the juices make it onto the bread for maximum flavor.
- Serve: Serve the bruschetta immediately, garnished with extra fresh basil leaves if desired, for a fresh and tasty appetizer.
Notes
- Use fresh, ripe tomatoes for the best flavor.
- Draining the tomatoes helps prevent soggy bread.
- Feel free to add a small splash of lemon juice for extra brightness.
- For a garlic boost, rub a cut garlic clove on the toasted bread before adding the tomato mixture.
- This bruschetta is best served fresh to maintain crispness of the bread.
