  • 1/4 cup chicken broth or water
  • 2 cups fresh spinach, roughly chopped
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Prepare Ground Turkey Mixture: Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until browned, breaking it apart with a spoon, about 5–6 minutes.
  2. Cook Aromatics: Stir in onion and garlic and cook for 2 minutes until softened.
  3. Add Sweet Potato Mixture: Add sweet potatoes, bell pepper, smoked paprika, cumin, oregano, salt, and pepper, and stir to coat.
  4. Cook Sweet Potatoes: Pour in chicken broth, cover, and cook for 8–10 minutes, stirring occasionally, until sweet potatoes are tender.
