  • 1 (15 oz) can petite diced tomatoes

Instructions

  1. Cook the Beef and Aromatics: In a large pot or Dutch oven, heat over medium heat and add ground beef. Break the beef apart as it cooks, then add the diced onion and minced garlic. Cook until the beef is browned and the onions are translucent, about 5-7 minutes.
  2. Season the Mixture: Season the beef and onion mixture with salt and pepper, stirring to combine evenly.
  3. Add Broth and Tomato Ingredients: Pour in the beef broth, petite diced tomatoes (with their juice), condensed tomato soup, Worcestershire sauce, and Italian seasoning. Stir well to combine all ingredients thoroughly.
  4. Incorporate Vegetables and Potatoes: Add the frozen mixed vegetables and diced potatoes to the pot. Stir gently to mix everything evenly.
  5. Simmer the Soup: Bring the soup to a boil over medium-high heat, then reduce the heat to low. Cover the pot and let the soup simmer for 30 minutes, or until the potatoes are tender when pierced with a fork.
