Description

Delightfully creamy and fruity White Chocolate Strawberry Truffles combine the lusciousness of white chocolate with fresh strawberries for a luxurious bite-sized treat. These no-bake truffles feature a strawberry-infused ganache center coated in smooth white chocolate, perfect for gifting or indulging on special occasions.

Ingredients

Scale

Strawberry Ganache

  • 1 cup fresh strawberries, diced and dried
  • 8 oz white chocolate chips or bars
  • 1/4 cup heavy cream
  • 2 tbsp unsalted butter
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1-2 tsp freeze-dried strawberry powder (optional)

Coating

  • 8 oz white chocolate for coating

Instructions

  1. Prepare the Strawberries: Gently dice fresh strawberries into very small pieces and pat them dry thoroughly with a paper towel to remove any excess moisture that could negatively affect the texture of the truffles.
  2. Make the Strawberry Ganache: In a small saucepan over low heat, warm the heavy cream and unsalted butter just until simmering. Remove from heat and stir in the white chocolate until it is completely melted and the mixture is smooth. Fold in the diced strawberries, powdered sugar, vanilla extract, and optionally freeze-dried strawberry powder. Mix thoroughly, then chill the ganache in the refrigerator for several hours until firm enough to scoop.
  3. Shape the Truffles: Once the ganache is well chilled and firm, use a teaspoon or melon baller to scoop uniform portions. Quickly roll each portion between your palms to form smooth balls, then place them on a parchment-lined tray.
  4. Coat the Truffles: Melt the additional white chocolate until glossy and smooth. Using forks or dipping tools, thoroughly coat each ganache ball with the melted white chocolate. Return the coated truffles to the tray and refrigerate until the coating sets completely.
  5. Add Finishing Touches: Optionally, sprinkle the truffles with freeze-dried strawberry powder, edible glitter, or drizzle them with contrasting melted chocolate for an attractive and festive presentation.

Notes

  • Ensure strawberries are well dried to prevent excess moisture in the ganache.
  • Freeze-dried strawberry powder enhances flavor but is optional.
  • Use good quality white chocolate for a smoother texture and better taste.
  • Chilling time can be extended if ganache is too soft for shaping.
  • Store finished truffles refrigerated in an airtight container for up to one week.
