For the chicken patties:
- 1 lb ground chicken
- 1/4 cup finely chopped onion
- 2 cloves garlic (minced)
- 1 tablespoon Dijon mustard
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
For assembling the sliders:
- 1 tablespoon olive oil
- 6 slider buns
- 6 slices pepper jack cheese
- 1/2 cup shredded lettuce
- 1/4 cup sliced pickles
- 1/4 cup barbecue mayo or your favorite sauce
Instructions
- Prepare the chicken patties: In a large bowl, mix ground chicken with chopped onion, garlic, Dijon mustard, smoked paprika, salt, and pepper until just combined. Form into 6 small patties.
- Cook the patties: Heat olive oil in a skillet or grill pan over medium heat. Cook the patties for 4–5 minutes per side, or until fully cooked through and golden brown. In the last minute of cooking, place a slice of pepper jack cheese on each patty and cover to melt.
- Assemble the sliders: Toast the slider buns if desired. Spread barbecue mayo on the bottom buns, then top with lettuce, a chicken patty, pickles, and the top bun. Serve immediately.
