Pasta:

  • 8 ounces pasta (such as spaghetti or linguine)

Yogurt Sauce:

  • 1 cup plain Greek yogurt
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Boil pasta until al dente, then drain and reserve 1/2 cup of pasta water.
  2. Prepare the Yogurt Sauce: Heat olive oil, sauté garlic and red pepper flakes. In a bowl, whisk together yogurt, Parmesan, lemon juice, salt, and pepper. Add reserved pasta water gradually to the sauce.
  3. Combine and Serve: Mix garlic oil with the yogurt sauce, toss pasta with the sauce, adding more pasta water if needed. Garnish with parsley and Parmesan before serving.

Notes

  • For added protein, top with grilled chicken or chickpeas.
  • Full-fat yogurt gives a creamier texture.
