Cookies:

- ½ cup lemon curd (store-bought or homemade)
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream Butter and Sugar: In a large bowl, cream the butter and sugar until light and fluffy. Beat in the egg, vanilla extract, lemon juice, and lemon zest.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet ingredients and mix into a soft dough.
- Form Cookies: Scoop out 1-inch balls of dough onto the baking sheet. Make an indentation in the center of each cookie.
- Bake: Bake for 10–12 minutes until edges are beginning to turn golden. Press the centers again while warm to deepen the indentations.
- Fill Cookies: Spoon about ½ teaspoon of lemon curd into each cookie center. Chill before serving.
Notes
- For extra lemony flavor, add a few drops of lemon extract to the dough.
