Ingredients
Shredded Zucchini:
2 cups (about 2 medium zucchinis)
Salt:

Instructions
- Prepare Zucchini: Place shredded zucchini in a colander, sprinkle with salt, and let sit for 10 minutes. Squeeze out excess moisture.
- Mix Ingredients: In a bowl, combine zucchini, onion, Parmesan, breadcrumbs, egg, garlic powder, pepper, and parsley if using. Mix well.
- Cook Patties: Heat olive oil in a skillet. Scoop 2 tablespoons of mixture per patty, flatten, and cook for 3-4 minutes per side until golden brown.
- Serve: Drain on paper towels and serve warm.
