1. Why This Recipe Works Every Time
This recipe came to life on one of those busy weeknights when I needed dinner to be a hero. I wanted something that tasted like my favorite teriyaki spot but didn’t require standing over a hot wok. The slow cooker does all the heavy lifting, transforming simple chicken thighs into something deeply savory and sweet.
The magic is in the balance of honey, soy, and a touch of vinegar. That combination creates a glossy sauce that clings to every shred of chicken. It’s forgiving, foolproof, and always a hit with my family — I bet it’ll become your go-to too.

🛒 Ingredients (Check Off As You Measure)
🍳 Step-by-Step Instructions
- Place chicken thighs in the slow cooker. In a bowl, whisk soy sauce, honey, brown sugar, garlic, ginger, and rice vinegar. Pour over chicken, turning to coat.
- Cover and cook on LOW for 4 hours or HIGH for 2.5 hours, until chicken is tender and cooked through.
- Remove chicken to a cutting board and shred with two forks. Set aside.
- Skim excess fat from the sauce. In a small bowl, mix cornstarch and water until smooth. Whisk into the sauce in the slow cooker. Cook on HIGH for 10-15 minutes until thickened.
- Return shredded chicken to the sauce, stir to coat, and serve over rice with sesame seeds and green onions.
👩🍳 Chef Elena’s Kitchen Notes & Storage
For extra caramelization, broil the shredded chicken on a baking sheet for 3-4 minutes after tossing in the sauce. Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months.
