How to Store, Freeze & Reheat

I love serving this over steamed jasmine rice with a sprinkle of sesame seeds and sliced green onions. It’s also amazing in lettuce wraps or stuffed into tacos for a fun twist. For a low-carb option, pair it with cauliflower rice or roasted veggies.

Leftovers keep well in the fridge for up to 4 days — just reheat gently on the stove or microwave. You can also freeze portions in zip-top bags for up to 3 months. Thaw overnight in the fridge and reheat for an easy future dinner.

This slow cooker honey teriyaki chicken is sticky-sweet, savory, and fall-apart tender. It's a family-favorite dump-and-go dinner that tastes like takeout but is made with simple pantry staples.

🍳 Step-by-Step Instructions

  1. Place chicken thighs in the slow cooker. In a bowl, whisk soy sauce, honey, brown sugar, garlic, ginger, and rice vinegar. Pour over chicken, turning to coat.
  2. Cover and cook on LOW for 4 hours or HIGH for 2.5 hours, until chicken is tender and cooked through.
  3. Remove chicken to a cutting board and shred with two forks. Set aside.
  4. Skim excess fat from the sauce. In a small bowl, mix cornstarch and water until smooth. Whisk into the sauce in the slow cooker. Cook on HIGH for 10-15 minutes until thickened.
  5. Return shredded chicken to the sauce, stir to coat, and serve over rice with sesame seeds and green onions.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For extra caramelization, broil the shredded chicken on a baking sheet for 3-4 minutes after tossing in the sauce. Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months.
