1. Why This Recipe Works Every Time
Whenever I make these Apple Crisp Mini Cheesecakes for my family, they disappear in minutes. The secret is layering textures—a buttery graham crust, a velvety cheesecake center, and a crunchy oat-apple topping that tastes like a warm hug. This recipe works every time because the mini size means even baking with no cracks, and the crisp topping adds a rustic charm that feels homemade.
I designed this with bake sales and holiday tables in mind. Each little cheesecake is just the right portion for sharing, and they look gorgeous with a sprinkle of cinnamon on top. Home cooks love them because they’re simple to assemble, use everyday ingredients, and deliver that ‘wow’ factor without any fussy water baths or complicated steps.

🍳 Step-by-Step Instructions
- Preheat oven to 325°F (165°C). Line a 12-cup muffin tin with paper liners. In a small bowl, mix graham cracker crumbs with melted butter. Press about 1 tablespoon of the mixture into the bottom of each liner. Bake for 5 minutes, then set aside to cool.
- In a large bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, beating well after each, then stir in vanilla. Pour the cheesecake filling over the cooled crusts, filling each cup about 3/4 full.
- In another bowl, combine diced apples, flour, brown sugar, oats, and cinnamon. Cut in cold butter with a pastry blender or your fingers until the mixture is crumbly. Sprinkle this crisp topping evenly over the cheesecake filling.
- Bake for 20–25 minutes, or until the edges are set and the centers are slightly jiggly. The topping should be golden and bubbling. Remove from oven and let cool in the pan for 15 minutes.
- Transfer to a wire rack and chill in the refrigerator for at least 2 hours before serving. Store leftovers in an airtight container in the fridge.
👩🍳 Chef Elena’s Kitchen Notes & Storage
For the creamiest texture, make sure your cream cheese is truly at room temperature—cold cream cheese makes lumpy filling. These mini cheesecakes keep in the fridge for up to 4 days, or freeze them (without liners) in a zip-top bag for up to 2 months; thaw overnight in the fridge before serving.
