In my test kitchen, I’m always looking for ways to make breakfast exciting without extra fuss. This Breakfast Fried Rice came to me one busy Sunday when I had leftover rice and a craving for something savory and hearty. It’s become a family favorite because it comes together in one pan, uses up leftovers, and tastes like a warm, comforting hug.
The magic is in the technique—high heat, day-old rice, and a quick toss that gives every grain a little crispiness. It’s forgiving, so even beginner cooks can nail it, and it’s endlessly adaptable to whatever’s in your fridge.

🍳 Step-by-Step Instructions
- Heat a large nonstick skillet or wok over medium-high heat. Add the chopped bacon and cook until crispy, about 5 minutes. Remove with a slotted spoon, leaving the bacon fat in the pan.
- Pour the beaten eggs into the hot pan. Scramble them quickly, breaking into small curds, until just set. Remove the eggs and set aside with the bacon.
- Add the onion and garlic to the same pan. Sauté for 2 minutes until fragrant and softened. Stir in the peas and carrots and cook for another minute.
- Add the cooked rice to the pan, breaking up any clumps with a spatula. Stir-fry for 3–4 minutes until the rice is heated through and slightly toasted.
- Return the bacon and eggs to the pan. Drizzle with soy sauce and toss everything together. Cook for 1 more minute, then garnish with green onions and serve hot.
👩🍳 Chef Elena’s Kitchen Notes & Storage
Use cold, day-old rice for the best texture—fresh rice turns mushy. Store leftovers in an airtight container in the fridge for up to 3 days, and reheat in a hot skillet for that fresh-fried flavor.
