How to Store, Freeze & Reheat

These quesadillas are fantastic on their own, but I love serving them with a side of sweet chili sauce or a dollop of sour cream for dipping. They also pair beautifully with a fresh green salad or a bowl of black bean soup for a heartier meal.

If you have leftovers, store them in an airtight container in the fridge for up to 2 days. To reheat, pop them in a skillet over medium heat for a few minutes per side to bring back that crispiness—microwaving will make them soggy. You can also freeze them before cooking; just assemble, wrap individually, and freeze for up to a month. Cook from frozen, adding a couple of extra minutes per side.

🍳 Step-by-Step Instructions

  1. In a medium bowl, combine the crab meat, cream cheese, mozzarella, cheddar, green onions, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix until well blended.
  2. Lay the tortillas on a clean work surface. Spread the crab mixture evenly over half of each tortilla, leaving a small border. Fold the other half over to form a half-moon.
  3. Heat a large skillet or griddle over medium heat. Spread a little butter on the outside of each quesadilla.
  4. Place one or two quesadillas in the skillet and cook for 2–3 minutes per side, until golden brown and the cheese is melted. Repeat with the remaining quesadillas.
  5. Remove from the skillet and let rest for 1 minute. Cut each quesadilla into wedges and serve warm with sweet chili sauce or sour cream for dipping.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For the best texture, be sure to drain the crab meat well and pick through it for any shell bits. You can swap the crab for shredded cooked chicken or imitation crab to save time. These quesadillas are best fresh, but leftovers can be stored in an airtight container in the fridge for up to 2 days and reheated in a skillet to crisp up again.
