Smart Pantry Swaps & Ingredient Notes
The stars here are the chicken and potatoes, but the sauce is the real MVP. Heavy cream gives it that luxurious thickness, while Parmesan adds a savory nuttiness. I always use Yukon Gold potatoes because they’re naturally buttery and mash like a dream—Russets work too, just don’t overwork them.
Don’t have heavy cream? Swap in half-and-half mixed with a teaspoon of flour to thicken. Out of Parmesan? Pecorino or even cheddar will do. And if you’re feeling fancy, throw in some sautéed mushrooms or spinach with the garlic—it’s a lovely twist that my test kitchen loves.
🛒 Quick Substitution Cheat Sheet
- Room-Temperature Rule: Let cold dairy, eggs, or proteins sit out for 15 minutes before cooking for even heat transfer.
- Herb Swap: Use 1 teaspoon dried herbs for every 1 tablespoon of fresh chopped herbs called for.
- Seasoning Balance: Finish with a tiny squeeze of fresh lemon juice or flaky sea salt right before serving to brighten rich flavors.
