How to Store, Freeze & Reheat

This salad is best enjoyed right after tossing, but you can prep ahead to save time. Chop all your veggies and store them in a sealed container in the fridge for up to 2 days, and keep the dressing in a jar. When you’re ready, just toss everything together—it takes less than 5 minutes.

If you do have leftovers, store them in an airtight container in the fridge for up to 1 day. The lettuce will soften, but it’s still tasty. To re-crisp, you can add a few fresh leaves or just enjoy it as is. I usually don’t have leftovers to worry about, though!

🍳 Step-by-Step Instructions

  1. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, oregano, and a pinch of salt and pepper until well combined. Set aside.
  2. In a large salad bowl, combine the chopped romaine, cherry tomatoes, cucumber slices, red onion, shredded carrots, and black olives.
  3. Drizzle the vinaigrette over the salad and toss gently until all the vegetables are evenly coated.
  4. Sprinkle the crumbled feta cheese on top and give it one more light toss.
  5. Taste and adjust seasoning with more salt and pepper if needed. Serve immediately.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For the best texture, make sure your lettuce is thoroughly dried—watery greens dilute the dressing and make everything soggy. This salad is best enjoyed fresh, but you can prep the veggies and dressing separately up to 2 days ahead; combine just before serving. Leftovers (if any!) keep in the fridge for 1 day, though the lettuce will soften.
