How to Store, Freeze & Reheat

This sautéed medley is incredibly versatile. Serve it alongside grilled chicken, steak, or fish, or toss it with pasta and a sprinkle of Parmesan for a quick vegetarian main. It’s also delicious over creamy polenta or stirred into scrambled eggs for a hearty breakfast.

For leftovers, let the dish cool completely, then transfer to an airtight container and refrigerate for up to 3 days. To reheat, warm it in a skillet over medium heat with a splash of water or broth to bring back some moisture. I don’t recommend freezing this one—the zucchini can get watery when thawed.

🍳 Step-by-Step Instructions

  1. Heat olive oil and butter in a large skillet over medium-high heat. Add the onion and cook, stirring occasionally, until soft and lightly golden, about 4-5 minutes.
  2. Add the mushrooms and cook, without stirring too often, until they release their moisture and start to brown, about 5 minutes.
  3. Stir in the zucchini, garlic, thyme, salt, and pepper. Cook for another 5-7 minutes, stirring occasionally, until the zucchini is tender but still has a slight bite.
  4. Remove from heat and stir in the fresh parsley. Taste and adjust seasoning if needed.
  5. Serve hot as a side dish or over grains, pasta, or polenta.

👩🍳 Chef Elena’s Kitchen Notes & Storage

Don't crowd the pan—cook in batches if needed to get that lovely golden-brown sear on the mushrooms. This dish is best fresh, but you can make it ahead and reheat gently in a skillet. Store leftovers in an airtight container in the fridge for up to 3 days.
