How to Store, Freeze & Reheat

This gingerbread is wonderful warm with a pat of butter, but it’s just as good toasted the next day. I love serving it alongside a cup of spiced tea or a dollop of whipped cream for dessert. For a brunch spread, slice it thick and serve with yogurt and fresh berries.

To store, keep it in an airtight container at room temperature for up to 4 days—it actually gets more moist as it sits. For longer storage, wrap the loaf tightly in plastic wrap and freeze for up to 3 months. To reheat, just pop a slice in the microwave for 15 seconds or toast it lightly.

🍳 Step-by-Step Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and cloves. Set aside.
  3. In a large bowl, cream the softened butter and brown sugar until light and fluffy. Beat in the egg, then stir in the molasses until well combined.
  4. Add the dry ingredients to the wet mixture in three additions, alternating with the hot water, starting and ending with the dry. Mix just until smooth—don't overmix.
  5. Pour the batter into the prepared pan and bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For an extra fluffy crumb, make sure your butter is truly at room temperature before creaming. Store the gingerbread in an airtight container at room temperature for up to 4 days, or wrap tightly and freeze for up to 3 months.
