How to Store, Freeze & Reheat

Serve this rice alongside grilled chicken, teriyaki salmon, or even a simple fried egg on top for a full meal. It’s also great as a side to any stir-fry or as a base for a quick rice bowl.

Leftovers keep well in the fridge for up to 3 days. To reheat, warm it in a skillet over medium-high heat with a splash of water or soy sauce to bring back the moisture. You can also freeze it in portions for up to 2 months—just thaw overnight and reheat as usual.

🍳 Step-by-Step Instructions

  1. Heat 1 tablespoon butter in a large skillet or wok over medium-high heat. Add the beaten eggs and scramble until just set, then remove them to a plate.
  2. Add the remaining butter to the skillet. Toss in the onion and carrots, cooking for 2–3 minutes until the carrots start to soften.
  3. Stir in the peas and garlic, cooking for another minute until fragrant.
  4. Add the chilled rice, breaking up any clumps with your spatula. Let it sit undisturbed for a minute to get that nice charred, fried texture.
  5. Pour the soy sauce and sesame oil over the rice, then fold in the scrambled eggs. Season with salt and pepper, and toss everything together for 2–3 minutes. Garnish with green onions and serve hot.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For the best texture, use rice that's been cooked and chilled overnight—fresh rice gets mushy. Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months; reheat in a hot skillet with a splash of soy sauce.
