For the Fried Rice

  • 2 cups cooked jasmine rice
  • 1 tablespoon vegetable oil
  • 2 eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 tablespoons soy sauce
  • 1 tablespoon sweet soy sauce (kecap manis)
  • 1 teaspoon sesame oil
  • Green onions, chopped (about 2 tablespoons)

For the Skewers

  • Chicken or beef skewers, grilled (4 skewers, about 1 per serving)


Instructions

  1. Heat the oil: In a large pan over medium heat, warm 1 tablespoon of vegetable oil until hot but not smoking.
  2. Scramble the eggs: Pour in the beaten eggs and scramble them gently until fully cooked. Remove the eggs from the pan and set aside.
  3. Cook the vegetables: Add the mixed vegetables to the same pan and stir-fry for 2-3 minutes until they are tender but still crisp.
  4. Add rice and sauces: Add the cooked jasmine rice along with soy sauce, sweet soy sauce (kecap manis), and sesame oil. Stir thoroughly to mix all the ingredients well and evenly coat the rice.
  5. Combine eggs and green onions: Fold the scrambled eggs back into the rice mixture along with the chopped green onions. Stir and cook everything together for an additional 2 minutes, allowing flavors to meld.
  6. Serve: Plate the Indonesian fried rice and top it with the grilled chicken or beef skewers. Serve immediately for the best flavor and texture.

Notes

  • You can substitute the mixed vegetables with any fresh or frozen vegetables you prefer.
  • For a spicier version, add some chopped chili or a dash of sambal oelek.
  • If you don’t have sweet soy sauce (kecap manis), mix regular soy sauce with a little brown sugar or honey as a replacement.
  • Use day-old cooked rice for better texture and to prevent the rice from becoming mushy.
