Description
A quick and flavorful Indonesian fried rice dish served with savory grilled chicken or beef skewers. This recipe combines jasmine rice with mixed vegetables, eggs, and a mix of soy sauces for a perfect balance of sweet and savory flavors, all stir-fried to perfection in just 25 minutes.
Ingredients
Scale
For the Fried Rice
- 2 cups cooked jasmine rice
- 1 tablespoon vegetable oil
- 2 eggs, beaten
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 tablespoons soy sauce
- 1 tablespoon sweet soy sauce (kecap manis)
- 1 teaspoon sesame oil
- Green onions, chopped (about 2 tablespoons)
For the Skewers
- Chicken or beef skewers, grilled (4 skewers, about 1 per serving)
Instructions
- Heat the oil: In a large pan over medium heat, warm 1 tablespoon of vegetable oil until hot but not smoking.
- Scramble the eggs: Pour in the beaten eggs and scramble them gently until fully cooked. Remove the eggs from the pan and set aside.
- Cook the vegetables: Add the mixed vegetables to the same pan and stir-fry for 2-3 minutes until they are tender but still crisp.
- Add rice and sauces: Add the cooked jasmine rice along with soy sauce, sweet soy sauce (kecap manis), and sesame oil. Stir thoroughly to mix all the ingredients well and evenly coat the rice.
- Combine eggs and green onions: Fold the scrambled eggs back into the rice mixture along with the chopped green onions. Stir and cook everything together for an additional 2 minutes, allowing flavors to meld.
- Serve: Plate the Indonesian fried rice and top it with the grilled chicken or beef skewers. Serve immediately for the best flavor and texture.
Notes
- You can substitute the mixed vegetables with any fresh or frozen vegetables you prefer.
- For a spicier version, add some chopped chili or a dash of sambal oelek.
- If you don’t have sweet soy sauce (kecap manis), mix regular soy sauce with a little brown sugar or honey as a replacement.
- Use day-old cooked rice for better texture and to prevent the rice from becoming mushy.
