How to Store, Freeze & Reheat

These cookies are wonderful on their own, but I love serving them with a cup of hot tea or a glass of cold milk. They also make a lovely addition to a dessert platter or cookie exchange. For a special touch, dust them with a little extra powdered sugar just before serving.

Store the cookies in an airtight container at room temperature for up to 5 days. You can also freeze the baked cookies for up to 3 months – just thaw them at room temperature for about 30 minutes before enjoying. They taste just as fresh as the day you made them.

🍳 Step-by-Step Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream the butter and sugar until light and fluffy. Beat in the egg, lemon juice, lemon zest, and vanilla until well combined.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Chill the dough for at least 30 minutes.
  5. Roll tablespoon-sized balls of dough in powdered sugar, then place them 2 inches apart on the prepared sheets. Bake for 10-12 minutes, until the edges are set and the tops are crackled. Cool on the sheets for 5 minutes before transferring to a wire rack.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For the most intense lemon flavor, use fresh lemon juice and zest – bottled juice just won't do. Store these cookies in an airtight container at room temperature for up to 5 days, or freeze the baked cookies for up to 3 months.
