How to Store, Freeze & Reheat

These cookies are best enjoyed warm, when the marshmallow is still gooey and the chocolate is soft. I love serving them with a cold glass of milk or alongside a steaming mug of hot cocoa for double the cozy factor. They’re also great for holiday cookie swaps or as a fun weekend baking project with kids.

To store, keep them in an airtight container at room temperature for up to 4 days—just pop them in the microwave for 10 seconds to bring back that melty center. You can also freeze the baked cookies for up to 3 months; just thaw at room temperature or warm them slightly in the oven. If you want to freeze the dough, shape the balls and freeze them on a tray, then transfer to a bag—bake straight from frozen, adding a couple extra minutes to the time.

🍳 Step-by-Step Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In a separate bowl, whisk the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chocolate chips if using.
  4. Scoop about 1 tablespoon of dough, flatten it slightly in your palm, and place a mini marshmallow in the center. Wrap the dough around the marshmallow, sealing it completely, and roll into a ball. Place on the prepared baking sheets, spacing them about 2 inches apart.
  5. Bake for 9-11 minutes, until the edges are set but the centers still look slightly soft. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

👩🍳 Chef Elena’s Kitchen Notes & Storage

Make sure the marshmallows are fully sealed inside the dough, or they'll leak out and create a sticky mess. Store these cookies in an airtight container at room temperature for up to 4 days, or freeze the baked cookies for up to 3 months—just thaw and enjoy!
