How to Store, Freeze & Reheat

These mini appetizers are best served warm, right out of the oven, but they’re still delicious at room temperature for a while. I love setting them on a platter with a small bowl of marinara for dipping—it takes them over the top. For a party, make a double batch; they’ll go fast.

If you have leftovers, store them in an airtight container in the fridge for up to 3 days. To reheat, pop them in a 350°F oven for 5-7 minutes to crisp them back up. You can also freeze the baked bites for up to 2 months—just thaw in the fridge overnight and reheat before serving.

Mini One Bite Appetizers for a Party

These mini one-bite appetizers are little pockets of savory goodness—crispy on the outside, warm and cheesy inside, with a hint of herb freshness. They're the perfect grab-and-go bite for any party, and they disappear faster than I can plate them.

🍳 Step-by-Step Instructions

  1. Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, mix together the ricotta, mozzarella, Parmesan, basil, sun-dried tomatoes, and garlic powder until well combined.
  3. On a lightly floured surface, roll out the puff pastry slightly and cut into 2-inch squares. Place about 1 teaspoon of the filling in the center of each square.
  4. Fold the pastry over the filling to form a triangle, press the edges with a fork to seal, and brush the tops with the beaten egg.
  5. Arrange the mini pastries on the prepared baking sheets and bake for 20-25 minutes, until golden and puffed. Let cool for 5 minutes before serving warm.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For a burst of freshness, add a tiny pinch of lemon zest to the filling—it brightens everything up. You can also prep these little guys a day ahead and keep them covered in the fridge; they'll bake beautifully the next day. Store any leftovers in an airtight container in the fridge for up to 3 days, or freeze baked ones for up to 2 months.
