How to Store, Freeze & Reheat

This cheesecake is a make-ahead dream. You can prepare it a day or two in advance and keep it covered in the fridge—the flavors actually meld and deepen overnight. For leftovers, just cover the pan or transfer slices to an airtight container; they’ll stay fresh for up to 5 days.

If you want to freeze it, do so before adding the drizzle. Wrap the chilled cheesecake tightly in plastic wrap and foil, and it’ll keep for 2 months. Thaw it in the fridge overnight, then add the drizzle and serve. It’s like having a homemade dessert ready whenever you need it.

🍳 Step-by-Step Instructions

  1. In a medium bowl, mix the cookie crumbs and melted butter until well combined. Press firmly into the bottom of a 9-inch springform pan. Set aside.
  2. In a large mixing bowl, beat the heavy cream with an electric mixer until stiff peaks form. Set aside.
  3. In another large bowl, beat the cream cheese, powdered sugar, cocoa powder, and vanilla until smooth and creamy. Gently fold in the whipped cream until no streaks remain.
  4. Pour the filling over the crust and smooth the top with a spatula. Drizzle with melted chocolate and swirl gently with a knife.
  5. Refrigerate for at least 4 hours, or overnight, until set. Run a knife around the edge before releasing the springform pan. Slice and serve chilled.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For a cleaner slice, dip your knife in hot water and wipe it dry before each cut. Store leftovers in the fridge for up to 5 days, or freeze the whole cheesecake (without drizzle) for up to 2 months—just thaw overnight in the fridge.
