How to Store, Freeze & Reheat

These bars are wonderful at room temperature with a cup of coffee, but I also love them slightly warm with a scoop of vanilla ice cream. For a brunch spread, cut them into smaller squares and dust with powdered sugar.

Store leftovers in an airtight container in the fridge for up to 5 days—they actually get more tender as they sit. To freeze, wrap the whole pan or individual bars in plastic wrap and foil; they’ll keep for 3 months. Just thaw overnight in the fridge and bring to room temp before serving.

🍳 Step-by-Step Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy lifting.
  2. In a large bowl, whisk together the flour, oats, brown sugar, baking soda, and salt. Pour in the melted butter and stir until the mixture forms a crumbly dough.
  3. Press about two-thirds of the oat mixture firmly into the bottom of the prepared pan. Set the remaining one-third aside for the topping.
  4. In a separate bowl, gently toss the raspberries with the granulated sugar, cornstarch, and lemon juice. Spread the raspberry mixture evenly over the crust.
  5. Sprinkle the reserved oat mixture over the raspberries. Bake for 30–35 minutes, until the topping is golden brown and the fruit is bubbly. Let cool completely in the pan before slicing into bars.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For cleaner slices, chill the cooled bars in the fridge for 30 minutes before cutting—this really helps the layers hold together. Store them in an airtight container in the fridge for up to 5 days, or freeze for up to 3 months (just thaw in the fridge before serving).
