How to Store, Freeze & Reheat

This cheesecake is a showstopper on its own, but I love serving it with a dollop of whipped cream and a few extra sprinkles on top. It also pairs beautifully with fresh berries or a drizzle of caramel sauce for a more decadent finish. For a fun twist, you can even add a layer of strawberry jam between the crust and filling.

Leftovers (if there are any!) keep well in the fridge for up to 5 days – just cover the pan or wrap slices tightly. To freeze, wrap the whole cheesecake (without the top sprinkles) in plastic wrap and foil, and it’ll last up to 2 months. When you’re ready to serve, thaw it overnight in the fridge, then add the sprinkles fresh for that crunchy pop.

🍳 Step-by-Step Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix flour, butter, 1/4 cup sugar, egg yolk, and vanilla until a dough forms. Press into the bottom of a 9-inch springform pan. Bake for 12-15 minutes until lightly golden. Let cool completely.
  2. Reduce oven to 325°F (165°C). In a large bowl, beat cream cheese and 1 1/4 cups sugar until smooth. Add eggs one at a time, beating well after each. Stir in sour cream, heavy cream, and almond extract until fully combined.
  3. Gently fold in 1/4 cup of the sprinkles. Pour the filling over the cooled crust. Smooth the top with a spatula.
  4. Place the springform pan on a baking sheet. Bake for 60-70 minutes, or until the edges are set but the center is slightly jiggly. Turn off the oven and leave the cheesecake inside with the door closed for 1 hour.
  5. Remove from oven and cool completely. Refrigerate for at least 4 hours or overnight. Before serving, sprinkle the remaining 1/4 cup of sprinkles over the top. Slice and enjoy!
