1. Why This Recipe Works Every Time
In my test kitchen, I’ve made this salad more times than I can count, and it never fails to bring smiles to the table. The magic is in the contrast: caramelized sweet potatoes against fluffy quinoa, with a tangy-sweet dressing that ties it all together.
This recipe works every time because it’s forgiving—you can swap ingredients based on what’s in your pantry, and it still tastes amazing. Plus, it’s just as delicious served warm on a chilly evening as it is cold from the fridge the next day.

🍳 Step-by-Step Instructions
- Preheat oven to 425°F (220°C). Toss cubed sweet potatoes with 1 tablespoon olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, until tender and caramelized.
- Meanwhile, combine quinoa and broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until liquid is absorbed. Remove from heat and let stand for 5 minutes, then fluff with a fork.
- In a small bowl, whisk together remaining 3 tablespoons olive oil, maple syrup, lemon juice, Dijon mustard, and a pinch of salt and pepper to make the dressing.
- In a large bowl, combine cooked quinoa, roasted sweet potatoes, pecans, cranberries, green onions, and spinach. Pour the dressing over and toss gently to combine.
- Serve warm, at room temperature, or chilled. Enjoy!
