How to Store, Freeze & Reheat

Serve this straight from the skillet with a sprinkle of fresh basil and a little extra Parmesan on top. It’s hearty enough as a main, but a simple green salad with lemon vinaigrette balances the richness beautifully.

Leftovers keep in the fridge for up to 3 days—just warm them gently on the stove with a splash of cream or broth to bring the sauce back to life. I don’t recommend freezing, as the cream sauce can separate when thawed.

🍳 Step-by-Step Instructions

  1. Cook the pasta according to package directions in salted boiling water until al dente. Drain, reserving 1/2 cup of pasta water, and set aside.
  2. Season the chicken pieces with salt and pepper. In a large skillet over medium-high heat, warm the olive oil and cook the chicken for 5-6 minutes until golden and cooked through. Remove and set aside.
  3. In the same skillet, reduce heat to medium, add garlic and sun-dried tomatoes, and sauté for 1 minute until fragrant. Pour in the heavy cream and chicken broth, scraping up any browned bits.
  4. Stir in the Parmesan, oregano, and red pepper flakes (if using). Let the sauce simmer gently for 3-4 minutes until it thickens slightly.
  5. Return the chicken to the skillet, then add the cooked pasta and toss everything together, adding a splash of pasta water if needed to loosen the sauce. Garnish with fresh basil and serve hot.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For extra depth, use the oil from the sun-dried tomatoes instead of olive oil—it's liquid gold. Store leftovers in an airtight container in the fridge for up to 3 days; reheat with a splash of cream or broth to revive the sauce.
