How to Store, Freeze & Reheat

These cookies are wonderful with a glass of cold milk or a cup of espresso for dipping. They also make a lovely gift when stacked in a tin with a ribbon—everyone loves a homemade treat.

To keep them fresh, store in an airtight container at room temperature for up to 5 days. You can also freeze the unbaked dough balls for up to 3 months; just bake them straight from the freezer, adding a minute or two to the bake time.

Vanilla Sugar Cookies

These vanilla sugar cookies are crisp at the edges, soft in the middle, and bursting with real vanilla flavor. They're simple enough for a weeknight treat but pretty enough for a cookie swap.

🍳 Step-by-Step Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and baking powder. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 2 minutes. Add the egg and vanilla extract, and beat until well combined.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
  5. Scoop tablespoon-sized dough balls, roll them in coarse sugar, and place them 2 inches apart on the prepared sheets. Bake for 10-12 minutes, until the edges are lightly golden. Let cool on the sheets for 5 minutes, then transfer to a wire rack.

👩🍳 Chef Elena’s Kitchen Notes & Storage

In my test kitchen, I always chill the dough for 15 minutes before baking—it keeps the cookies from spreading too much. Store them in an airtight container at room temperature for up to 5 days, or freeze the baked cookies for up to 3 months.
