Smart Pantry Swaps & Ingredient Notes
The chuck roast is my top pick because it has just the right amount of marbling—that fat melts during cooking and keeps the meat juicy. If you can’t find chuck, a bottom round or brisket works beautifully, too.
For the vegetables, feel free to swap in parsnips or turnips for some of the potatoes, and add a cup of frozen peas in the last 30 minutes for a pop of color. If you’re out of cream of mushroom soup, a can of cream of celery or a simple beef broth with a tablespoon of cornstarch will do the trick.
🛒 Quick Substitution Cheat Sheet
- Room-Temperature Rule: Let cold dairy, eggs, or proteins sit out for 15 minutes before cooking for even heat transfer.
- Herb Swap: Use 1 teaspoon dried herbs for every 1 tablespoon of fresh chopped herbs called for.
- Seasoning Balance: Finish with a tiny squeeze of fresh lemon juice or flaky sea salt right before serving to brighten rich flavors.
