How to Store, Freeze & Reheat

I love serving this pot roast straight from the slow cooker with a side of crusty bread to mop up the gravy. It’s also fantastic over egg noodles or mashed potatoes for extra comfort.

Leftovers keep beautifully in the fridge for up to 4 days—the flavors even deepen overnight. To reheat, just warm it gently on the stovetop or in the microwave, adding a splash of broth if needed. You can also freeze portions in zip-top bags for up to 3 months; just thaw overnight in the fridge before reheating.

🍳 Step-by-Step Instructions

  1. Place the chuck roast in the bottom of a 6-quart slow cooker. Season with black pepper on both sides.
  2. Scatter the carrots, potatoes, and onion slices around and on top of the roast.
  3. In a small bowl, whisk together the beef broth, cream of mushroom soup, dry onion soup mix, and Worcestershire sauce until smooth.
  4. Pour the soup mixture evenly over the roast and vegetables. Cover and cook on LOW for 8 hours or on HIGH for 5-6 hours, until the meat is fork-tender.
  5. Once done, let the roast rest for 10 minutes, then slice or shred. Spoon the juices over the top and serve warm.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For extra depth, sear the roast in a hot skillet with a little olive oil for 2-3 minutes per side before adding to the slow cooker—it's worth the extra step. Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months.
