How to Store, Freeze & Reheat

These bars are perfect for dessert, but they also shine at brunch or as an afternoon pick-me-up with coffee. I love serving them slightly chilled with a dusting of powdered sugar – it makes them look extra pretty. If you’re bringing them to a potluck, cut them into small squares and they’ll be the first thing gone.

Store any leftovers in an airtight container in the fridge for up to 5 days – they actually get more flavorful as they sit. To freeze, wrap individual bars in plastic wrap and pop them in a freezer bag for up to 3 months. Thaw overnight in the fridge and they’re as good as new.

🍳 Step-by-Step Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  2. In a medium bowl, mix the flour and ½ cup sugar. Cut in the cold butter using a pastry blender until crumbly. Add the egg yolk and mix until dough comes together. Press evenly into the bottom of the prepared pan.
  3. In a separate bowl, beat the softened cream cheese with ¼ cup sugar and vanilla until smooth. Spread this mixture over the crust.
  4. In another bowl, toss the diced apples with the egg white, 2 tablespoons flour, brown sugar, cinnamon, and salt. Spoon the apple mixture evenly over the cream cheese layer.
  5. Bake for 30-35 minutes, until the edges are golden and the filling is set. Let cool completely before slicing into bars. Store in the fridge for up to 5 days.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For a cleaner slice, chill the bars in the fridge for at least an hour before cutting – it makes the layers hold together beautifully. You can swap the apples for pears or peaches, and if you're short on time, use a store-bought shortbread crust. These bars keep in the fridge for up to 5 days, or freeze for up to 3 months.
