How to Store, Freeze & Reheat

These brownies are delicious warm with a scoop of vanilla ice cream, or simply on their own with a glass of cold milk. For a brunch spread, cut them into small squares and serve alongside fresh fruit and coffee. They’re also great packed in lunchboxes—they stay moist for days.

Store leftovers in an airtight container at room temperature for up to 3 days. To freeze, wrap the whole pan or individual brownies in plastic wrap and then foil; they’ll keep for up to 3 months. Thaw at room temperature or pop them in the microwave for 15 seconds for that fresh-from-the-oven feel.

🍳 Step-by-Step Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the mashed bananas and vanilla extract.
  3. In a separate bowl, sift together the flour, cocoa powder, baking soda, and salt. Gently fold the dry ingredients into the wet mixture until just combined—be careful not to overmix.
  4. Fold in the chocolate chips, reserving a few for the top. Pour the batter into the prepared pan and sprinkle the remaining chips over the surface.
  5. Bake for 25-28 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let cool completely in the pan before lifting out and slicing into squares.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For the best texture, use very ripe bananas with lots of brown spots—they add natural sweetness and moisture. Store leftover brownies in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
