1. Why This Recipe Works Every Time
In my test kitchen, I’m always chasing that perfect cheesecake—one that’s creamy without being heavy, and sweet without being cloying. This Biscoff version came about when I had a jar of spread left over from a cookie project, and I thought, why not swirl it into a classic cheesecake? The result was so good that my family now requests it for every birthday and holiday.
The magic here is the Biscoff itself: its caramelized, spiced flavor pairs beautifully with the tangy cream cheese filling. The cookie crust adds that familiar crunch, and the swirl on top makes it look like you spent hours, when really it’s just a few simple steps. It’s a dessert that feels fancy but is totally doable on a weeknight.

🍳 Step-by-Step Instructions
- Preheat oven to 325°F (160°C). Grease a 9-inch springform pan. In a bowl, mix cookie crumbs, melted butter, and 2 tbsp sugar. Press firmly into the bottom of the pan. Bake for 10 minutes, then let cool.
- In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, beating well after each. Mix in vanilla, sour cream, and heavy cream until just combined.
- Melt 1/2 cup Biscoff spread and drizzle into the cheesecake batter. Gently swirl with a knife to create ribbons.
- Pour the filling over the crust. Place the springform pan in a larger baking dish and add hot water halfway up the sides (water bath). Bake for 50-55 minutes, until the edges are set but the center is slightly jiggly.
- Turn off the oven and let the cheesecake cool inside with the door ajar for 1 hour. Then refrigerate for at least 4 hours or overnight. Before serving, drizzle with melted Biscoff and sprinkle with crushed cookies.
👩🍳 Chef Elena’s Kitchen Notes & Storage
