How to Store, Freeze & Reheat

This cheesecake is best served chilled, straight from the fridge. I like to top it with an extra drizzle of melted Biscoff and a sprinkle of crushed cookies right before serving, so the texture stays crisp. It’s perfect on its own, or with a dollop of whipped cream and a coffee on the side.

Leftovers (if there are any!) keep well in the fridge for up to 5 days, covered. You can also freeze slices for up to 2 months—just wrap each piece tightly in plastic and foil. To thaw, pop it in the fridge overnight, and it’ll taste just as fresh as the day you made it.

🍳 Step-by-Step Instructions

  1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan. In a bowl, mix cookie crumbs, melted butter, and 2 tbsp sugar. Press firmly into the bottom of the pan. Bake for 10 minutes, then let cool.
  2. In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, beating well after each. Mix in vanilla, sour cream, and heavy cream until just combined.
  3. Melt 1/2 cup Biscoff spread and drizzle into the cheesecake batter. Gently swirl with a knife to create ribbons.
  4. Pour the filling over the crust. Place the springform pan in a larger baking dish and add hot water halfway up the sides (water bath). Bake for 50-55 minutes, until the edges are set but the center is slightly jiggly.
  5. Turn off the oven and let the cheesecake cool inside with the door ajar for 1 hour. Then refrigerate for at least 4 hours or overnight. Before serving, drizzle with melted Biscoff and sprinkle with crushed cookies.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For a cleaner slice, use a knife dipped in hot water and wipe it between cuts. This cheesecake keeps well in the fridge for up to 5 days, or in the freezer for up to 2 months (wrap tightly in plastic and foil).
