How to Store, Freeze & Reheat

These truffles are wonderful on their own, but I love serving them with a dusting of sea salt or alongside a scoop of vanilla ice cream. They’re also perfect for gifting—place them in a pretty box with parchment liners, and they’ll be the star of any cookie exchange or bake sale table.

Store the truffles in an airtight container in the fridge for up to a week. They also freeze beautifully for up to 3 months—just thaw in the fridge before serving. If you’re making them ahead, roll and chill the centers, then dip them the day before your event for the freshest look.

🍳 Step-by-Step Instructions

  1. Crumble the cooled brownies into a large bowl, removing any hard edges if you prefer a smoother texture.
  2. Add the melted chocolate chips, heavy cream, and vanilla extract. Mix until the mixture holds together when pressed.
  3. Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet. Chill for at least 30 minutes, or until firm.
  4. Melt the coating chocolate in a microwave or double boiler. Dip each chilled brownie ball into the chocolate, letting any excess drip off.
  5. Place the coated truffles back on the baking sheet. If desired, sprinkle with toppings while the chocolate is still wet.
  6. Chill until the coating is set, about 15 minutes. Store in an airtight container.

👩🍳 Chef Elena’s Kitchen Notes & Storage

Use slightly underbaked brownies for extra fudgy truffles—they crumble better and hold moisture. Make ahead and keep in the fridge for up to a week, or freeze for up to 3 months. For a pretty finish, drizzle with white chocolate after the dark coating sets.
