How to Store, Freeze & Reheat

These egg bites are wonderful warm, but they’re just as tasty at room temperature, making them great for brunch buffets or packed lunches. I love serving them with a side of fresh fruit or a simple green salad for a complete meal. They also pair beautifully with a dollop of salsa or hot sauce.

For storage, keep leftovers in an airtight container in the fridge for up to 4 days. They freeze beautifully for up to 2 months—just thaw overnight in the fridge and reheat in the microwave for 30-45 seconds. I often make a double batch on Sunday so we have breakfast ready all week.

🍳 Step-by-Step Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin well with cooking spray or butter, or use silicone muffin liners for easy release.
  2. In a blender, combine the eggs, cottage cheese, cheddar, garlic powder, salt, and pepper. Blend until smooth and creamy, about 20 seconds. The mixture should be light and pourable.
  3. Stir in the bell pepper, red onion, chives, and optional bacon by hand. If you prefer a smoother texture, you can pulse a couple of times, but leaving some bits adds nice texture.
  4. Pour the egg mixture evenly into the prepared muffin cups, filling each about 3/4 full. Give the pan a gentle tap on the counter to release any air bubbles.
  5. Bake for 22-25 minutes, or until the egg bites are set and the tops are lightly golden. Let them cool in the pan for 5 minutes, then run a knife around the edges and gently lift them out. Serve warm or at room temperature.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For extra creamy bites, use full-fat cottage cheese and don't over-blend—leaving a little texture is lovely. Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 2 months; reheat in the microwave for 30-45 seconds.
