How to Store, Freeze & Reheat

I love serving this soup with crusty bread for dipping, or over a bowl of cooked pasta or rice to make it even heartier. A sprinkle of fresh parsley and extra Parmesan on top makes it look beautiful and adds a pop of freshness.

Leftovers keep well in the fridge for up to 4 days—just reheat gently on the stove, adding a splash of broth if it thickens. You can also freeze it for up to 3 months; thaw overnight in the fridge before reheating.

🍳 Step-by-Step Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through, about 6-8 minutes. Remove with a slotted spoon and set aside.
  2. In the same pot, add the onion and cook until soft, about 4 minutes. Add the garlic and cook for another minute until fragrant.
  3. Pour in the chicken broth and bring to a simmer. Let it cook for 5 minutes to blend the flavors.
  4. Reduce heat to low, then stir in the heavy cream and Parmesan cheese until the cheese is melted and the soup is smooth. Season with salt, pepper, and red pepper flakes if using.
  5. Return the sausage to the pot and add the spinach. Stir until the spinach wilts, about 2 minutes. Serve hot with extra Parmesan on top.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For a lighter version, swap the heavy cream for half-and-half, but keep in mind the soup will be slightly thinner. Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months—reheat gently on the stove, adding a splash of broth if needed.
