Smart Pantry Swaps & Ingredient Notes
The base is simple: good sirloin or flank steak, refrigerated cheese tortellini (fresh or frozen both work), and heavy cream. For the steak, you can swap in chicken or even shrimp if you prefer—just adjust cooking times. The sun-dried tomatoes add a sweet-tart punch, but if you don’t have them, a handful of cherry tomatoes halved will do nicely.
Spinach is my go-to green here because it wilts in seconds, but kale or arugula are great substitutes. If you’re watching dairy, use half-and-half instead of cream and a lighter hand with the Parmesan—still creamy, just less rich. And don’t skip the Italian seasoning; it ties all the flavors together.
🛒 Quick Substitution Cheat Sheet
- Room-Temperature Rule: Let cold dairy, eggs, or proteins sit out for 15 minutes before cooking for even heat transfer.
- Herb Swap: Use 1 teaspoon dried herbs for every 1 tablespoon of fresh chopped herbs called for.
- Seasoning Balance: Finish with a tiny squeeze of fresh lemon juice or flaky sea salt right before serving to brighten rich flavors.
