How to Store, Freeze & Reheat

This dish is best served right away while the steak is still tender and the sauce is warm and luscious. For a pretty presentation, spoon it into shallow bowls and top with extra Parmesan and a pinch of red pepper flakes if you like a little heat. It pairs beautifully with a crisp green salad or some garlic bread to mop up the sauce.

If you have leftovers, store them in an airtight container in the fridge for up to 3 days. Reheat gently in a skillet over low heat, adding a splash of broth or cream to loosen the sauce. I don’t recommend freezing this one—the cream sauce can separate and the tortellini get mushy. Better to enjoy it fresh!

🍳 Step-by-Step Instructions

  1. Cook tortellini according to package directions; drain and set aside.
  2. Season steak slices with salt and pepper. Heat olive oil and 1 tbsp butter in a large skillet over high heat. Sear steak in batches until browned, about 2-3 minutes per side. Remove and set aside.
  3. Reduce heat to medium, add remaining butter and garlic. Sauté for 30 seconds until fragrant. Pour in cream and broth, scraping up browned bits. Stir in Parmesan and Italian seasoning; simmer until slightly thickened, about 3 minutes.
  4. Add cooked tortellini, spinach, and sun-dried tomatoes to the sauce. Cook for 2-3 minutes until spinach wilts and everything is coated.
  5. Return steak to the skillet, toss gently, and heat through. Serve hot with extra Parmesan if desired.

👩🍳 Chef Elena’s Kitchen Notes & Storage

Slice the steak against the grain for maximum tenderness, and don't overcrowd the pan when searing—work in batches to get a nice crust. Leftovers keep in the fridge for up to 3 days; reheat gently on the stovetop with a splash of cream to bring the sauce back to life.
