How to Store, Freeze & Reheat

This trifle is best served chilled, straight from the fridge. I love it with a cup of coffee or iced tea, and it’s a hit at potlucks because you can make it the night before. If you’re serving a crowd, individual jars or glasses are adorable and make serving a breeze.

Store any leftovers covered in the fridge for up to 3 days – the cake will continue to soften, which is actually delicious. If you’re making it ahead, hold off on the final berry garnish until just before serving to keep everything looking fresh. You can also freeze the assembled trifle for up to a month, but thaw it overnight in the fridge and expect a softer texture.

🍳 Step-by-Step Instructions

  1. In a large bowl, whisk the lemon pudding mix with cold milk for about 2 minutes until thick. Gently fold in the thawed whipped topping until smooth.
  2. In a small bowl, toss 1 1/2 cups blueberries with lemon zest, lemon juice, and sugar. Let sit for 5 minutes to release their juices.
  3. In a glass trifle dish or individual cups, layer half of the pound cake cubes, then half of the blueberry mixture (including juices), then half of the lemon pudding. Repeat layers once more.
  4. Cover and refrigerate for at least 2 hours, or up to overnight, so the cake soaks up the flavors.
  5. Before serving, top with the remaining 1/2 cup blueberries and a dollop of whipped topping. Garnish with mint if desired.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For the best texture, let the trifle chill for at least 2 hours so the pound cake softens beautifully. Store leftovers in the fridge for up to 3 days – just keep the top layer of berries off until serving to avoid sogginess.
