How to Store, Freeze & Reheat

This dish is wonderful served right away, but it also makes great leftovers. I love it with a sprinkle of fresh cilantro and a squeeze of lime for a bright finish—my kids even add a little sriracha for a kick.

Store any leftovers in an airtight container in the fridge for up to 3 days. To reheat, add a splash of chicken broth or water and warm in a skillet over medium heat, stirring occasionally, until heated through. You can also freeze it in portion-sized containers for up to 2 months; just thaw overnight in the fridge before reheating.

Tender chicken and fluffy rice simmered in a sweet-tangy pineapple sauce with a hint of garlic and ginger. This one-pan wonder is a family favorite that tastes like a tropical vacation in a bowl.

🍳 Step-by-Step Instructions

  1. In a large skillet or Dutch oven, heat olive oil over medium-high heat. Season chicken with salt and pepper, then sear until golden on all sides, about 5-6 minutes. Remove chicken and set aside.
  2. In the same skillet, add rice, garlic, and ginger. Stir for 1 minute until fragrant. Pour in reserved pineapple juice, chicken broth, soy sauce, and brown sugar. Scrape up any browned bits from the bottom.
  3. Bring to a boil, then reduce heat to low. Return chicken to the skillet, cover, and simmer for 15 minutes.
  4. Stir in pineapple chunks and diced bell pepper (if using). Cover and cook for another 5-7 minutes, until rice is tender and liquid is absorbed.
  5. Fluff with a fork, let rest for 5 minutes, then serve warm. Garnish with green onions or sesame seeds if desired.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For extra flavor, use chicken broth in place of water and add a splash of pineapple juice to the rice for a subtle sweetness. Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months—just reheat gently with a splash of broth.
