How to Store, Freeze & Reheat

These cookies are wonderful on their own, but I love serving them with a scoop of vanilla ice cream or a drizzle of melted chocolate. They also make a lovely gift—just stack them in a pretty tin with parchment paper between layers.

Store leftovers in an airtight container at room temperature for up to 5 days. To freeze, place baked cookies in a freezer-safe bag for up to 3 months; thaw at room temperature for about 15 minutes before serving.

🍳 Step-by-Step Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter and sugar together until light and fluffy, about 2 minutes. Mix in the egg yolk and vanilla until well combined.
  3. Gradually add the flour and salt, mixing on low speed just until a soft dough forms. Do not overmix.
  4. Scoop tablespoon-sized portions of dough, roll into balls, and if desired, roll each ball in sanding sugar for a sparkly finish. Place them 2 inches apart on the prepared sheets.
  5. Bake for 10-12 minutes, until the edges are just golden. Let cool on the pans for 5 minutes, then transfer to a wire rack to cool completely.

👩🍳 Chef Elena’s Kitchen Notes & Storage

For the best texture, make sure your butter is truly softened—not melted—so the cookies hold their shape. Store these in an airtight container at room temperature for up to 5 days, or freeze the baked cookies for up to 3 months.
