1. Why This Recipe Works Every Time

Every time I make these Mediterranean spinach and feta crisps, I’m transported back to my grandmother’s kitchen in Florence. She’d whip up something similar with whatever greens were in the market, and the smell of butter and phyllo baking would fill the whole house. This recipe is my modern take—crispy, cheesy, and endlessly forgiving.

The magic is in the contrast: the flaky, golden layers of phyllo against the creamy, salty filling. It’s simple enough for a Tuesday night but fancy enough for a dinner party, and everyone always reaches for seconds. That’s why it works every time—it’s all about good ingredients and a little love.

🍳 Step-by-Step Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine the spinach, feta, ricotta, Parmesan, egg, garlic powder, oregano, salt, and pepper. Mix well.
  3. Lay one sheet of phyllo on a clean surface and brush lightly with melted butter. Top with another sheet and brush again. Repeat until you have 4 sheets stacked, then cut the stack into 4 long strips.
  4. Place a heaping tablespoon of filling at the bottom of each strip, then fold the dough over the filling in a triangle shape, continuing to fold like a flag until the strip is fully wrapped. Repeat with the remaining phyllo and filling.
  5. Place the crisps on the prepared baking sheet, brush the tops with remaining butter, and bake for 15-18 minutes, or until golden and crispy. Serve warm.

👩🍳 Chef Elena’s Kitchen Notes & Storage

Make sure the spinach is really dry—squeeze it in a clean kitchen towel to avoid soggy crisps. You can assemble these a day ahead and refrigerate unbaked; just add 2-3 minutes to the baking time. Store leftovers in an airtight container in the fridge for up to 3 days, and reheat in a 350°F oven for 5 minutes to bring back the crunch.
